To make your own chai spices:
(you can double or triple the doses and keep in a glass jar for later) 1 teaspoon ground cinnamon 1 teaspoon ground ginger 1 teaspoon ground cardamom 1/2 teaspoon ground nutmeg I teaspoon ground cloves INGREDIENTS (for a tall glass jar) 1 cup organic rolled oats 1 cup millet or spelt flakes 1/2 cup dried mulberries 4 dried apricots (diced) 2 tablespoons pumpkin seeds 2 tablespoons sunflower seeds 1/2 cup organic whole almonds 1/2 organic hazelnuts 2 tablespoons melted coconut oil 2 tablespoons hazelnut oil 2 tablespoons maple syrup 1 heaped tablespoons nut butter of choice (I used cashew butter) 2 tablespoons unsweetened dry raisins 2 tablespoons candied oranges or cranberries (diced in tiny cubes) 2 tablespoons chai spices METHOD: Heat up the oven to 180° C. Cover a baking tray with some parchment paper. In a large bowl, mix everything together except for the raisins and candied oranges. Mix until everything is well coated in oil and spices. Pour onto baking sheet and spread evenly. Bake for about 15 to 20 minutes. Stir halfway through. Take out of the even and let cool. Once the mixture has cooled down, throw in the raisins and candied oranges. Fill the jar. GRANOLA AUX EPICES CHAÏ INGREDIENTS: Pour un grand bocal POUR LES EPICES CHAÏ: 1 C à C de cannelle en poudre 1 C à C de gingembre en poudre 1 C à C de cardamome en poudre 1 C à C de muscade en poudre 1 C à C de clou de girofle en poudre POUR LE GRANOLA: 100g de Flocons d’avoine bio 100g de Flocons d’épeautre ou millet 50g de Raisins secs 4 à 6 abricots secs 2 C à S de Graines de courge 2 C à S de Graines de tournesol 50g d' amandes 2 C à S d'huile de coco bio (fondue) 2 C à S d'huile de noisettes 2 C à S de sirop d’érable 1 C à S de beurre d’amande ou cacahuètes 100% naturel 2 C à S d'épices Chai (comme ci-dessus ) METHODE: Mélanger les épices chai et garder le surplus s’il y a dans un petit bocal hermétique. Préchauffer le four à 180°C. Couvrir une grille avec un papier sulfurisé ou silicone. Dans un grand saladier, mélanger tous les ingrédients SAUF les raisins et les abricots. Faire en sorte que tous les ingrédients soient bien recouverts d’huile. Transférer sur la grille et mettre au four pendant 15 minutes en mélangeant à mi-cuisson (Attention, chaque four est différent, garder un œil pour que ça ne brûle pas) Sortir du four une fois les noix à coques bien dorées puis laisser refroidir. Une fois le granola refroidi, incorporer les raisins et les abricots et remplir votre bocal.

INGREDIENTS : for 4 people
1 can chopped tomatoes (400g) 1 can red kidney beans (250g) 1 small can sweetcorn (150g) 2 small carrots, chopped 1 small onion, chopped finely 1 TBS ground cumin 1 TBS paprika 1 Tsp fenugreek 1 Tsp ground turmeric 1 tsp garlic powder A pinch of Cayenne pepper 1 Tsp ground bay leaves 1 TBS tomato paste Salt and pepper to taste Olive oil for the pan Some water 2 avocados, mashed and mixed with 1/2 tsp garlic powder and 1/2 lime juice 1 dollop of vegan coconut yogurt Some tortilla chips, vegan grated cheese (optional) 2 cups of brown rice METHOD: Heat the oil in a large pan then add the spices and the onion. Mix well so they do not burn. Reduce the heat then add the kidney beans, the carrots and the corn. Cook for a couple of minutes then add the can of tomatoes and the tomato paste. Rinse out the can and pour 1/2 of it in the pan. Mix well and add the ground bay leaves, cayenne pepper, garlic powder and salt and pepper. Cook for about 20 to 30 minutes (the longer the better). Serve with brown rice, tortilla chips and vegan cheese put under the grill for a couple of minutes, a dollop of guacamole and yogurt and a splash of lime. CHILI SIN CARNE SIMPLE ET FACILE INGREDIENTS: pour 4 personnes 400g de tomates pelées 250g haricots rouges cuits (rincés et égouttés) 150g de maïs doux (rincé et égoutté) 2 petites carottes, coupées en petits morceaux 1 petit oignon haché 1 C à S cumin en poudre 1 C à S paprika 1 C à C fenugrec 1 C à C curcuma en poudre 1 C à C ail en poudre Une pincée de piment de Cayenne 1 C à C de laurier en poudre 1 C à S concentré de tomates Sel et poivre De l'huile d'olive pour la poêle Un peu d'eau (environ la 1/2 de la boîte de tomates pelées quand vous la rincerez) 2 avocats, écrasés ou mixés avec 1/2 C à C d'ail en poudre et 1/2 jus de citron vert 1 grosse C à S de yaourt végétal Quelques chips tortilla passées au grill du four pendant 2 minutes avec un fromage végétal rapé (facultatif) 300g riz complet METHODE: Faire chauffer l'huile dans une grande poêle puis ajouter les épices et l'onion. Bien mélanger pour ne pas faire brûler. Baisser le feu et ajouter les haricots rouges, les carottes et le maïs. Cuire pendant 2 à 3 minutes puis ajouter les tomates pelées et le concentré de tomates. Ajouter l'eau et mélanger le tout avant d'ajouter le laurier, le piment, l'ail et le sel et poivre. Cuire pendant environ 20 à 30 minutes. Servir avec du riz complet, des chips tortilla avec le fromage fondu, une grosse cuillère de guacamole et de yaourt ainsi qu'un trait de juice de citron vert. |
