1Publication en Français en bas de la page INGREDIENTS: (for 2 people) Some water (about 2 tablespoons) 100 g brown rice 1 shallot (minced) 1 teaspoon ginger powder 1 tablespoon turmeric powder 1 teaspoon coriander powder 1 tablespoon tamari 1 teaspoon Dijon Mustard 1 inch piece of fresh ginger (pressed or finely chopped) 1/2 lime juice 1 tablespoon raw organic honey (or maple syrup) 200 ml coconut cream 200 g fresh green beans 1 medium-sized carrot (peeled and sliced) METHOD: Cook the rice according to the instructions. I always use a rice cooker and steam my veg in the basket on top. If you do not have a rice cooker or steamer, just use two pans, one for the rice and one for the veg). The trick to cooking oil free is to make sure the pan is VERY hot. Once your pan is very hot, add the spices and shallot and keep stirring for a couple of minutes. If it sticks, add some water ( a TBS at a time) to the pan. Reduce the heat and add the tamari, the lime juice, the coconut cream and the mustard. Stir until combined. Cook for a couple of minutes. Then add the fresh ginger and honey (or maple). Once the beans and carrots are cooked, transfer to the coconut sauce, mix well until the vegetables are coated. Cover with a lid and cook for another 5 minutes on low heat. Serve the rice topped with the sauce. You can add fresh coriander and lime wedges.
